Intensive Rotational Grazing

We use sheep as partners in the system, managing vegetation, building soil health, and creating optimal conditions that allow our agaves to flourish

Our approach to land management

Restoring Soil Health

At Ixcali, we practice regenerative grazing as a way to bring life back into the system—building soil, increasing water retention, and creating a resilient ecosystem around our agaves. By integrating animals thoughtfully, we’re not just growing a crop—we’re restoring function to the land and preparing it for the long term.

Our Mentors

This approach has been deeply inspired and shaped by the mentorship and encouragement of leaders like Alejandro Carrillo, Ray Archuleta, and Rodrigo Mestas, whose work continues to guide how we think about regeneration, stewardship, and what’s possible for agriculture in California.
